We think of salads as ‘health food’. They are full of fruits and vegetables which means lots of vitamins, minerals and fiber. When we start adding the dressing is where we get into trouble. This apple salad uses Greek yogurt with a drizzle of honey or agave nectar for sweetness.
4 large or 6 small apples cored and cubed
1 stalk of celery, diced
1/4 cup of dried cranberries
1/4 cup chopped pecans or walnuts
1 cup of Greek yogurt
1 tablespoon honey or agave nectar
1/4 teaspoon cinnamon
Dice the apples and celery. Add the dried cranberries and nuts.
Mix the Greek yogurt with honey or agave nectar. Sprinkle with cinnamon.
Pour the yogurt mixture over the apples.
