Avocado Chicken Salad

Replacing the mayo or salad dressing in chicken salad with avocado is a healthy option that doesn’t sacrifice creaminess or taste. I added grapes for a hint of sweetness and sliced almonds for a little crunch.  Don’t forget the lime juice. Delicious!

Avocado chicken salad


8 boneless chicken breasts
1 celery stalk, diced
1/2 cup green grapes, sliced
1/4 cup slivered almonds
2 ripe avocados peeled and mashed
1/4 plain Greek yogurt
1/2 teaspoon garlic powder
1 teaspoon cilantro
1 1/2 tablespoons lime juice
salt and pepper to taste
celery salt (optional)


Cook the chicken until tender. Cut into small chunks.
Slice the grapes and mix with the chicken.  Stir in almonds.
Mash the avocados and mix with Greek yogurt. Mix into the chicken and add garlic, cilantro, and lime juice.
Season with salt, pepper and celery salt to taste.
