This quick and easy salad is light, fresh and nutritious
1 bag of frozen edamame thawed
1 can of black beans, drained and rinsed
1 cup of frozen whole kernel corn drained
1/2 cup red pepper
1/2 cup red onion
1/4 cup lemon juice
1/4 cup olive oil
1 tablespoon Dijon mustard
1 teaspoon oregano
1 teaspoon basil
salt and pepper to taste
Thaw frozen edamame and remove from pods.
Combine the first five ingredients.
In a small bowl mix lemon juice, oil, mustard, oregano, basil, salt and pepper.
Pour over salad ingredients and mix well.
