Hungarian Cucumber Salad

I found this delicious recipe at Kalyn’s Kitchen.  This recipe is easy, plus it allows me to use a day’s worth of cucs in one recipe.  Win-Win!

Cucumber salad


2 English cucumbers or 3-4 fresh garden cucumbers
2 tsp. fine table salt (for drawing the water out of the cucumbers)
2 garlic cloves, finely minced (more or less to taste)
1/4 cup white wine vinegar (any mild vinegar can be used, but don’t use a sweet vinegar)
1/4 cup sour cream
2 T olive oil
1/2 – 1 tsp. sweet paprika
fresh ground black pepper to taste


Peel and slice the cucumbers.  Sprinkle with two teaspoons of salt and allow to sit for about 20 minutes. Drain the cucumbers and remove excess water.

Mix together minced garlic, vinegar, sour cream, olive oil, paprika.  Pour over the cucumbers and mix gently with spatula.  According to Kalyn, the secret ingredient is the paprika.  It really does give the salad a kick. You can more if you think it needs it.
