Oven Roasted Tomatoes

This is a simple recipe that brings out the flavor of home-grown tomatoes.

Beautiful Slow Roasted Tomatoes

Ingredients:

Bunch of cherry or small variety tomatoes
Two tablespoons of olive oil (more or less needed depending on the number of tomatoes used.)
Salt
Pinch of sugar

Directions:

Preheat oven to 300 degrees.
Cut the tomatoes in half and put in a large bowl.
Pour the olive oil over the tomatoes and use a spatula to gently stir and spread the oil evenly.
Sprinkle with salt and a pinch of sugar.
Place tomatoes – seed side up – on a cookie sheet.
Bake for two hours.

The tomatoes can be used as a snack, or side dish.  They are good in vegetable and pasta salads or can be pureed and used as a tomato sauce.
